For southeastern New York, I'd recommend "Heaven and Earth: The Last
Farmers of the North Fork" by Steve Wick (1996, St. Martin's Press, New
York).  The book briefly covers the history of farming on the North Fork of
Long Island, but the majority is devoted to farming today, including
information on migrant workers.  The text is well-written, and the black
and white photographs are riveting.
