Whitford's 1906 work is the best. Erie Water West is the next best. Depends on what you want to research. No one book can cover it all. For the best photographs, the Canal Society of New York State field guides offer the best collection, most are full page prints, and focus on a certain area. You can find Whitford on the net at the University of Rochester history site.

Subject: Looking for a book on the history of the Erie Canal...

....well researched, with excellent historic photographs.   Any ideas?  I'm away from my usual research sources, including my database of NYHIST-L posts.
