Once upon a time, the Museum of the City of New York (5th Ave. & 105th St.) had an semi-permanent exhibit on New Amsterdam with a (small scale, partially) reconstructed Fort with a mural on the walls showing the cityscape c. 1660. But that's been gone for more than 30 years.
